Vegan -Thanksgiving

What no Turkey????

 

Yes, there are some of us who, do not want to eat Tom the Turkey. Never again. mmm. I had to give it some thought. I grew up eating Turkey and ham for Thanksgiving. But this Thanksgiving I though let me try a dinner with no meat. That is right. Just fruits and vegetables. Fresh , no canned food. mmm.  And some seeds throw in.

Yes,, eating fruits with seeds , because the seeds have healing powers. And it is where the plant gets its nutrients from.

I had a blast with everyone. Here are some of the dishes we ate.IMG_20131110_133759_253

Fresh cranberry sauce blend with dates, apple and orange juice

1 cup pitted dates

3 cups of fresh cranberries

1/2 cup of orange juice

1-small apple , cored and diced

optional (toasted pecans pieces for garnish)

 

Soak dates in hot water for 15 minutes or until dates soften.

Mix-all ingredients in  food processor and blend utnil smooth, but not too watery. Place sauce in covered bowl and cool in refrigerator for 10-20 minutes. Before serving, top with toasted pecan pieces for garnish.

Serves 4

We also had savory cornbread stuffing, along with spicy collard greens with sun-dried tomatoes and pine nuts, vegan mac and cheese  and fresh vanilla sweet potato cream pie. .All were very delicious.

And believe or not you can still have room for a tasty dessert : French Vanilla Sweet Potato Cream Pie- (vegan -dairy creame was used instead of milk)
