Spring and Summer Salads You Can Eat Now from @CuisineNoirMag

Spinach and kale are two incredibly good vegetables containing calcium and Vitamin C. My suggestion is that you increase both in your diets if you have no health restrictions. Both bring great taste to a salad, so I’ve included partial recipes below for a kale salad and a spinach salad.
Southwestern Kale Salad
Active: 15 minutes
Total time: 20 minutes
Servings: 4 to 6

INGREDIENTS
3 heads kale, coarsely chopped
2 cloves garlic, minced
1 lemon, juiced
1 teaspoon prepared Dijon mustard
1 teaspoon chili powder
½ cup extra-virgin olive oil
¼ cup smoked cheddar cheese, shredded
¼ cup pepper Jack cheese, shredded
salt
fresh ground black pepper
blue corn, black bean or other tortilla chips, for garnish

Spinach Salad with Miso Maple Bacon Vinaigrette

Servings: 4 | Prep time: 20 minutes | Cook time: 10 minutes
INGREDIENTS
8 ounces young spinach
2 large eggs, hard boiled and sliced
4 large white mushrooms, sliced thin
1 granny smith apple, diced small
3 ounces red onion, thinly sliced
Dressing
1 tablespoon white miso
2 tablespoon rice wine vinegar
1 tablespoon mirin
1 tablespoon maple syrup, pure
pinch of cayenne
1 slice thick cut bacon
